Spicy Vidalia Onion Relish

Ingredients:

Makes 2 cups

1 each Vidalia onion, small diced
1 each red bell pepper, small diced
1 each scallion, cut small
1 Tbsp flat leaf parsley, chopped
1 tsp jalapeno, seeds removed and fine diced
1/3 cup seasoned rice vinegar
¼ cup extra virgin olive oil
To taste Kosher Salt

Instructions:
In a small mixing bowl combine all ingredients. Stir to blend well. Let sit for 1-2 hours and stir before using.
