Ingredients:
1 cup Speckled Heart Grits (or stone ground)
2 cups water
2 cups milk
1 tsp. salt
4 Tbsp. unsalted butter
2 cups sharp cheddar cheese, grated
To taste fresh-cracked black pepper
To taste kosher salt
Instructions:
Place water, milk, grits and salt into a double boiler. Bring to a boil and reduce heat to a simmer. Cover and cook for 30-40 minutes, stirring frequently to avoid sticking and lumps. Stir in butter and grated cheese until combined. Season with salt and pepper.
